Ah, I assumed sweet potato casserole was savory, not sweet. Like some kind of root vegetable casserole.

Sweet potato casserole is sweet, not really savory. Think pie…without the crust. Boil sweet potatoes to soften. Mash. Add butter, cream, brown sugar and ginger. Whip’em. Enjoy!
As for the onions, they are pearl, in a cream sauce. Peel onions. Parboil them. In a skillet, melt butter. Add vermouth. Add a couple of cloves. Add cream. Reduce to a thick syrup. Remove cloves. Add the onions. Sprinkle sugar on top and carmelize. Reduce by 1/3. Place in casserole dish and place in 325 degree oven for 45 minutes. Done!
