Uber could be more expensive ( if you don't use the taxi option which are the same price as a meter ) in Europe compared to regular taxis.
In Germany, taxis are generally decent and reliable.

However, as others mentioned, for Frankfurt, the best way to go from the city to the airport ( or vice-versa ) is to take the S-Bahn ( train ).
