OK, I'm replying myself here. Sent an email to the DK office and they replied that check in will in fact close 60 minutes before departure and the 2 hours is quoted just to make sure that everybody will make it regardless of queues etc.

Still I'd say this is confusing in that it definitely looks like they're saying 2 hours to be the *minimum* check-in time, when in fact it is not.
