As far as requesting a room in advance, one could only guess as to how helpful that may be. I would assume much depends on arrival time, status relative to other Bonvoy members, if you're on an award vs paid booking, etc. It's still peak season and I imagine most visitors are likely paying cash and booking directly with Domes or through other tour operators, etc.

I believe the road noise was minimal even when walking the pathways between the property and the roadway. From inside the room, there was none. One's perception of this is going to be relative to everyday exposure, of course. Having visited from the metropolitan New York area I can tell you what I most certainly didn't hear: sanitation trucks, sirens, heavy diesel vehicles, trucks with squeaky brakes, unnecessary honking, vehicles blasting music. Every now and then I noticed someone on an ATV zooming through town, but that was while out walking.

Unrelated to the property, but in line with the cost of food/outside dining, I cannot recommend enough: The Village Taverna. You'll need a reservation, but you can arrange that by walking up to the restaurant and speaking with the owner.
Was the Village Taverna in Moraitika or elsewhere ?
