It’s always hard to answer that kind of questions as it totally depends on which runway(s) are in operations. For CDG- BOS, if taking off facing east, you won’t have any view of Paris normally. If facing west, Paris will be on the left, but usually the plane is taking quickly a northeast direction so not a lot to see about Paris. Arriving in BOS from Paris, better to be on the right side in most cases. Views on downtown BOS are better upon take-off but there are so many runways there that it is unpredictable.

Good point, the landing runways can always be different. I was looking at past FlightRadar24 CDG - BOS data and it seems like most times you land from the north, but sometimes the plane loops around and lands from the south (which would mean left side is better).
It also seems like the sun would be up from the south, so sitting on the right side avoids direct sunlight. Seems like right side is a winner haha
