KLM uses the Airbus A330-300 on that route. Economy seats have 31 inch pitch, and the seats are 17.5 inches wide.
United uses the Boeing 767-300 on that route, and seems to use the "
76C" layout most often. Economy seats have 31 inch pitch, and the seats are 17.3 inches wide.

For someone who is 6'3" tall, leg room is going to be a serious challenge no matter which airline you choose.
On United you could book the two aisle seats in the middle section (seats "D" and "F") and hope that the "E" middle seat remains empty so that your husband can stretch his legs sideways.
On KLM, the economy configuration is 2-4-2 except for the last couple of rows where it's 2-3-2.
Service wise I preferred KLM over United for my pre-covid trips, but I don't know who offers the best ("least poor" may be a better description) service now.
