account. ie, either card can be used to tap into the airline credit, and charges can be on either card, but the max. is the single $200/year.
Uber is different, since it gets deposited to a single Uber account, based on the account that the primary amex plat is added to first. I suppose you can both use that Uber account.

One other thought would be that if you don't need your AU to have immediate access, it might be possible to wait and subsequently get a bonus for adding a AU. There is risk that the offer for extra points for adding an AU won't be around though.
Paid AUs do get all that.
I just got the card, and will be traveling sooner than my wife. So I've added my wife with just the gold card for now - I'll update hers to a paid AU when she is ready to hit the road again. For now, when traveling together, we'll need the extra lounge access (2 kids over 2 - so until Feb. 2023 at least, this works for Centurion.

Once the new Centurion lounge access policy kicks in Feb. 2023, no guests at all unless you spend 75K annually on the card for Amex Centurion lounges. Until then, you can bring a guest. For priority pass, you get a guest both pre- and post-Centurion lounge policy change. Escape/Aspire lounges get the same guest. Same with other lounge collection lounges (ie, Plaza Premium). Note that Delta is the outlier, if accessing a Delta Skyclub (only if you are flying Delta), there is no guest access - either currently or in the future. So you'd need a paid plat AU for that.
