I assume you are talking about the free Chase free night certificate from the IHG credit card? I used my free night at the Intercontinental in Downtown LA last year and at the Intercontinental at Monterey this year. You just have to find a date when the property is willing to take the Chase free night certificate.
Just did a quick search for random weekday in late september and it shows free nights available at Indigo Downtown LA and Kimpton Everly (Hollywood/Sunset Strip). It also shows "Chase free night available" which means you have to change the dates or call the hotel at Intercontinental Downtown LA, Kimpton La Peer (WeHo/Beverly Hills adjacent), Kimpton Palomar (Westwood/Century City), Kimpton Wilshire (Mid City/Museum Row), and Kimpton Shorebreak (Huntington Beach).
I'd give those properties a call before I burn the free night on a Holiday Inn.
I also see all the LA area Holiday Inn available for free night on the random date I chose: LAX, Torrance, Burbank, Long Beach, La Mirada, El Monte, Buena Park, Anaheim. El Monte is not close to the airport, nor is it near the typical tourist destinations. But as already mentioned, it is a decent base if you are on a foodie tour and have rental car.
