The paper version also seems more easily photocopied when it needs to be sent in for insurance or other documentation purposes.
I always get paper boarding passes, in addition to mobile ones. The mobile ones are only good for departing an airport. The paper ones are good to use for proof if flight and insurance claims, like you said, and also to get discounts and points in duty free and discounts throughout certain business when flying to some international cities like Dubai.
I get the paper boarding pass either at the check-in desk if I'm checking luggage or by a gate agent.
