On a signature flight 2 days I asked for cheese and fruit plate. It was a junior flight attendant serving and wasn't sure on the protocol so asked the SD. SD instructed her that cheese is catered for every passenger, dessert is only catered enough to select one of the two options and after serving the whole cabin she can give out remaining desserts to anyone that wants.
