You should be able to use it your final day for breakfast. I've never had an issue. I think what they mean about not rolling over would be if you had a two night stay and didn't use the $30 your frist day and then the day you check out you would only have a $30 credit and not have the $30 from the previous day roll over. It was that way with the old system, there were times when I had friends staying in another hotel in the same city or weren't gold and the hotel (with the exception of the old DT times square) would never allow me to skip breakfast one day and roll the two over to the next day and allow us and two friends to have the breakfast benefit.

If you use the credit for breakfast or to make a pantry purchase, one thing that is a pain is the hotel may not credit it and you have to go to the front desk or message the hotel in the app Had it happen twice and one time I told the front desk about it and they made the correction and my credit card was charged the right amount. At the Palmer House I used the app messenger and they took care of it but they charged my credit card for the total before the adjustment and then issued a $30 credit to my credit card. Still a pain though.
