Since it is February when you are traveling, you might want remember that Segovia, Avila and Salamanca (all worth visiting) are colder than Madrid. You could get glorious, sunny days in the 50's (F), or some rain, sleet or even snow with highs of 38-40. Matter of luck. They are easy trips from Madrid.
If you like wine, as you mention, you might want to consider a trip to La Rioja (excellent food and of course, wine) or Aranda del Duero and/or Burgos, center of the Ribera del Duero wines.
