But once I updated the outbound, I can now wait a couple more weeks to rebook the return segment as long as it's flown before 9/1/2022?
Please think ticket validity and reservation window separately.
If validity condition is satisfied, and you can reasonably book your flights, you get what you want.

Ticket validity rule:
1 year from the issuing date (before 1st segment flown)
1 year from the first segment (after 1st segment flown)

Reservation rule:
You can book 355 days in advance.
(of course, some airlines only open at 330 days in advance etc.)

Reservation change rule:
96 hours before the flight that you want to fly on, AND before the flight departure time that you don't want to fly on.

ANA web site limitation:
If you want to change a flight beyond 1 year from ticket issue date before 1st segment flown, you have to call ANA agent.
You can't do that on the web.

I hope this helps your understanding.

And, about your question about August 21, 2022.
If your award ticket that starts on 1st September 2021 is ticketed on 1st August 2021, you can change your first segment to 1st August 2022(due to ticket validity), not 21st August 2022 nor 1st September 2022.
However, your 2nd and continuing segments can be changed to any date between date of the first segment and 1 year from the first segment(based on booking window)
