Your most likely point to be checked may well be (or rather will be) in YYZ on check-in since that is where they verify whether or not you are good to enter Hong Kong and where since they can't see a return, may ask for proof of either a return or onward travel out of HKG. I've done the multiple one-ways thing a few times with different countries (in/out of Europe a couple of times, in/out of Australia, in/out of New Zealand, in/out of Japan, and in/out of China using TWOV, Transit Without Visa). Never had an issue. Have hard-copy print-outs of all of your itineraries to show at check-in, and in case you get asked at immigration on arrival. Otherwise this should be a non-issue as long as you have proof of onward or return travel that satisfies entry/exit requirements.
