That’s what I found too, but agents are sticking to their guns even when I asked about it. Just had a group show up for the 1:30am flight and they said they won’t check them in until 10:30. I’d be super annoyed - it seems like all pre-security restaurants are closed, and presumably all past security will be closed by the time they get through.

I didn't bother fight it, but it was mid-day, so I just went and spent another hour at the pre-security observation deck. Last time the agent told me that the system wouldn't let them scan the bag to let it down the conveyor, obviously not sure how accurate that is.
I've found airport establishments usually stay open until 30 minutes or so before the last flight (obviously big business if they're the only ones open at that time) - At ANC there looks to be a 24 hour McDonalds as well as a bar open until 1am, not sure how accurate that is though.
