Oops. Yeah, you should not have gone through Immigration, or checked luggage. All the goodies are on the airside of security.
You might try sweet-talking Security into letting you back onto the concourse. They may not, but if you show them your itinerary and explain what you did, maybe they'll relent. They allowed me in when I went out of the terminal for a little while, and said I needed to regain access to the Transit Hotel (which was the truth). I had my passport and itinerary, but not my boarding pass. It's entirely up to their discretion, though.
If you want to dump your luggage for a few hours, there is a luggage desk downstairs, below baggage claim. There's a grocery store down there, too. And yes, some of the hawker centres are open all night. The taxi drivers may know where they are, so ask at the taxi stand.
Unfortunately, there's nothing else that's close to the airport that you could walk to. And the trains don't start until about the time you need to check in.
