While the most scenic parts are between Denver and Grand Junction, I think its also really scenic all the way to Salt Lake City. The other scenic part is between Reno and Sacramento as it crosses the Sierra Nevada and Donner Pass. There you are on or very close to the original Transcontinental Railroad, to where you can actually see some the old snow sheds.
I might be changing my plans to go to SLC just for better flight options ... but I think it will be dark shortly after I leave Grand Junction.
