I distinctly recall instructions to inflate the vest by pulling on only one of the red tabs, saving the other tab as a backup. Other instructions advise inflating the vest after leaving the aircraft.

On Air Jamaica, the cabin crew used to have a contest among two passengers to see who could don the vest correctly. It typically took a long time.

Although the airlines would never allow it, I've always wanted to try my hand at putting on the vest or attempting to open an exit. Although I fly all the time and pay close attention to safety instructions, I'm sure that I would botch such procedures.
