When will the Italian government announce the extension of quarantine? I heard something about them doing that but thought it would have finished by now.
If Iberia fly the route you can always ask to be rebooked via MAD, however, as Spain and Italy are in schengen you won't pass through immigration at the Italian airport so you will have to remember to tell the Italian authorities you arrived from the UK and need to quarantine
