SAT is a mini boneyard of sorts, thanks to the good weather. We currently have an ex-Iberia DC-10, several ex-United 737s, and a handful of other aircraft. We even have a BAC-111, which I believe is used for law enforcement training purposes.
Dee Howard has a huge facility for aircraft maintenance and painting. It is not suprising to see multiple heavies from all corners of the world on site. For example, in recent times I have seen a Saudi Arabian MD-11, a bunch of UPS widebodies, a Polar Air 747, and the white 747 of which you speak.
