Sorry, this is unacceptable. Call again and ask for a supervisor. As Oliver said, rerouting to FRA or MUC wouldn't be any issue at all. But they have the duty to transport you to STR. That is what you paid for, it is for them to figure out how. If they decide to cancel those flights for good, they need to make sure to accommodate the passengers which were booked on those. Don't be nice on the phone, be very specific what you want, and tell them you won't accept anything less than either getting to STR or if acceptable for you to MUC.
And yes, if they still won't give in, have them give you a written statement that they won't follow the rules and chose to ignore the EU Passenger rights, then follow up with claiming the extra costs you have.
I called again today, prepared to ask for a written statement that they don't offer rerouting. This time around the CS rep offered to get us from CPH to STR the next day, with Lufthansa via FRA. We'd have to spend the night in CPH (the ORD flight gets in at 1pm, and the LH flight departs at 6:40am), but we can live with that. Catch is that they couldn't book us on that flight yet. Apparently LH only allows them to book seats 14 days before departure. So I'll have to call again on Sunday or Monday and hope this is still an option. What a saga.
