I also hear the knives at Ginzu are also pretty cool to look at. My latest find: 6th floor of the Marubiru, across from Tokyo station. Don't know the name of the restaurant, but it is the one on the far right once you get off the escalator. They serve traditional Japanese fare, the best gindara I've ever had. World class. Go for lunch, 1,200 yen.
