Id rather move it to next year than get the refund as the fare was exceptional (The £999 fares) but im unsure as to whats allowed or how to do it.
The rebooking allowance is still ticket validity so one year from booking. So for you that would be up to October 2021. the first flight must be by October 2021, but subsequent flights in the booking can be later.

You can try on MMB if that lets you choose new dates as it way allow you to go beyond ticket validity, but if you call you are likely to get a no based on the current policy.
