I'd actually only require a hotel for one evening as I'd be visiting family in Chiang Rai and then staying in a private property in Phuket for the remainder. Of course this is all subject to restrictions being removed.
Have you tried custom holiday maker? Should work fine, although you’ll need to enter legs at DUB-LHR / LHR-HKT

Will then allow a search, price in EUR and pay a small deposit
