I got an email for an upcoming stay in NYC that says I will get a $12 F&B credit per person on my stay... hoping that is just a standard Hilton graphic and the hotel does in fact have the $15 credit per person as the terms state for certain cities.

I had a thought though concerning a 3 night stay with how you use 3 sets of F&B credits. I get that they are use it or lose it and you can't stack them over multiple days, but when would the "clock" essentially reset on your F&B credits for multiple night stays. I'm guessing mid-day between the normal check out/check in times? For a one night stay it does explicitly say you could use your credit the night you arrive for dinner, drinks, etc.. or the morning you depart for breakfast, etc.. So using that logic on a multi-night stay you should be able to use your F&B credits on a given morning for breakfast and then use your next night's credits that same evening for dinner or drinks (I know you wouldn't be able to use credits for breakfast the following morning in this example). Even though they occur on the same calendar day, logic would say that is two separate nights on your stay for credit purposes.

Also, is there anything stating that the two credits per room/per night have to be used at the same time? I.e. two breakfasts, two dinners? If not, there shouldn't be any issue with Person 1 using their credit for a drink tonight for example and Person 2 using their credit for breakfast tomorrow morning. In that example, it would definitely be advantageous to put two people down on a reservation even if traveling solo...
