I've just got back from a month in Italy, and there are also many places you can get a rapid antigen test for free, as it used to be required for travel between regions. Large train stations typically had a tent setup offering tests - we never had to wait more than 5 minutes.
If your husband and son are not yet fully vaccinated they will need a PCR test for the flight from Italy to Greece.
