Special meals are not supposed to be upgraded for any reason. They should have moved onto the next passenger on the manifest.
If you always request special meals, you limit your chances of an Invol U/G to almost 0%.
The check-in staff are supposed to "Comment SFU J-F W-J M-W / No SPMLS".
The fact that you got a "double jump" is pretty nice though. They are really not supposed to do that either.
Happened to me once on short-haul. Had special meal request. I was upgraded to CE and once seated I was asked by the CSD to move back to ET. I didn't make too much of a fuss becuase it was such a short flight except to say that I am only willing to sit in my original OCLI'd seat which she arranged. Probably should have complained to get some ex-gratia but I had just received 10k for a previous complaint on lost-luggage and sometimes you just let things be - it comes with the age I suppose
On another note, WT to WT+ is not a problem even with special meal request because food in WT+ is standard WT food.
