Three nights at Ventana would be fine, it's a beautiful location with lots of great hiking nearby, though you may well get a little tired of the dinner menu. Just keep your fingers crossed for no fires.
I would ditch Grand Hyatt San Francisco entirely, and spend those nights at CVR instead.
We do want to spend at least 2 nights in the city as it's our first time in San Francisco. In addition, I feel like 3 nights in CVR PLUS 3 nights in Ventana might be too much of the same.
