If you are fully vaccinated there might be element of this trip feasible with minimum hassle, depending on how much the rules are relaxed by the time of your arrival. Also in country like France it seems external visitors will have to use the local app for the digitial health passport. You might need to spend time for that.
If you are not fully vaccinated this trip might not be possible at all or only some elements, and much of your time might be done looking for, managing and doing PCR tests. There are no guarantee museum will be open or you might need a test (or a digital vaccination record).
All in all this will most likely be difficult to organize, time consuming and not always relaxing. Far from ideal for a sabbatical. Pushing by one year is probably your best bet. Also there is no reason Europe will be a madhouse in 2022.
