When it comes to entertainment, you are correct that both Delta and JetBlue will usually offer entertainment. For JetBlue there will be built in entertainment on 100% of flights, for Delta this is true for most flights, but not regionals or 717 aircraft. American pretty much only offers streaming entertainment to your own device across most of its domestic fleet now.
As far as snacks/drinks on board, JetBlue will also offer the most comprehensive selection here as well, having returned to mostly full service back in November. Delta and American do not offer any meaningful level of service in the economy cabin.
Personally, factors like price and schedule held mostly constant, when flying economy I would choose JetBlue the vast majority of the time, even if the checked bag is $5 more. Seat comfort and service are notable better on the whole. Between Delta and American, it would really come down to which aircraft each are operating for me to choose one or the other.
Delta offers a full beverage service (exact same as pre-COVID, besides the mini cans) in Y on all flights >500 miles. Flights 250-500 miles get the express service, which again, is the exact same as pre-COVID (besides mini cans).
