When the Club is closed, you can take advantage of the Snack hour in their main restaurant (I think 5.30 PM to 7.30 PM). There is a dedicated part in the restaurant where you can seat, you can also choose the terrace. There is no buffet, but you are offered a menu with 3-4 little dishes and 1-2 desserts, you can order whatever you want from the menu. You may also order red wine or white wine, sparkling wine, Caipirinhas, any soft drinks and the staff will offer refills throughout this time frame. Servers were very friendly, attentive and efficient, no wait, good food, and Front Office manager came by to make sure I was having a great stay. Breakfast is served in the restaurant, buffet and some a-la-carte items, great offering vs what you can find in Europe during the pandemic.
For the pool and gym, you are supposed to book a slot in advance, but the staff will let you in even if you did not book if it's not so crowded.
A lot was changed since you stayed there in January and nothing were same except the gym and pool bookings when I stayed there in mid April. I would not wrote about exact arrangements there for obvious reason because Sao Paulo was in extreme lockdown at that time. Currently the situation in Sao Paulo is totally different, breakfast is allowed at hotel restaurant and club lounge can be open in any hotel.
