There is a big difference between ZRH - ATH and ZRH - IST: for the former, you need to enter Switzerland, for the latter not (you would stay in the non-Schengen transit zone).
Since (as the above links make it very clear), the US is still on the high risk list for entry purpose, you would not be allowed to enter Switzerland without a valid reason.
This might obviously change at some point of time, but that's the situation today.

So ZRH - ATH not possible (even if they accept the 2 tickets as "one flight"), ZRH - IST probably possible if they accept that you continue your journey.
