I have the Logitech Folio Touch for my 2020 iPad Pro and it is very good, but I suspect the Magic Keyboard will be better to use on an aircraft tray table. If going for the new M1 iPad Pro (2021) check first that whatever keyboard you buy will work with it. I think you should be ok with the iPad 11", with the larger iPad being very slightly thicker due to the new display tech employed.
