Check in will close X minutes before scheduled departure. So you will not have 120 minutes.
With the AU Govt CV19 departure checks to ensure you have authority to leave AU, need more time at check in than say in 2019

Looks like DL40 leave at 09:55. So go to Sydney the night before. Then get to T1 at 07:00
Or be prepared to no show DL SYD-LAX
In the US. Returning home for a funeral 😢
