I strongly recommend Continental, stopping in Houston, in order to be on a widebody the whole way.

If you leave LAX on the noon flight, you will be on a 767-400 from LAX to Houston and then a 777 from Houston to Paris. This will be the most comfortable way to get there.

You will get bonus miles for your first purchase on the CO website, so I'd suggest doing it there.
