You're not alone. Many travelers avoid hotel breakfasts (paid or free) for a wide variety of reasons. Additionally, many travelers don't even eat breakfast, ever.

So, in the end? Whats the point of Courtyard? To make money for Marriott and shareholders. Apparently it works, otherwise there would be no Courtyards.
This is the real answer.
Not every hotel is going to appeal to every type of traveler. The reality is that Marriott has 67* different hotel brands. If Courtyard by Marriott doesn't excite you, most locations will have other brands from which to choose.
* I'm exaggerating, but not by much. The current count on the Marriott website is 30 different brands.
