Platinum is not the very first AmEx cards most people have. It is the most expensive card for common people. So most AmEx cardholders would not be using Platinum card as the main driver. When they get the needs for Platinum card, they would probably already have other AmEx cards.

It has no spending bonus other than air ticket. Even the no fee Everyday cards earn more MR points than the Platinum card.
As mentioned many times, tons of people put 1x spending on Amex Platinum, including road warriors. Same with Chase Sapphire Reserve. You can go to the Chase forum and find many Flyertalkers that put all spend on a Chase Sapphire Reserve when a lot of it was 1x. Amex would like more spend, but the idea that no one spends on unbonused categories on this card just doesn’t check
