Keep in mind that the seat map is not always a good indicator of the flight's load. Seats available for assignment may require a fee, or there's a large number of passengers who bought basic economy tickets (especially true for leisure routes).

Once in a while, someone does refuse to move out of their middle seat. Not very likely, but possible. Still, I would take my chances and book A&C.
