I think it's fair to say that you're trying to be way too clever if you use this approach and it'll be sod's law that on whatever day, one of the flights will use the main pier.
Worse still, both airlines have more than one flight a day into LGW, so you see the plane come in and your friend's not on it - in the gate area they won't be advertising where the plane has come from.
Best place to meet would seem to be the coffee bar immediately infront of you and ever so slightly to the left as you exit the customs hall at LGW South.
