I think the current "one hour rule" is Covid-related. There aren't many places where, going through even 5 or 6 or if you've got a great server who wants to pour extra stuff, 7 tastes, that an hour is an unreasonably short time.
We are not really concerned about how much we can drink in one hour, but we really want to sit, relax, and enjoy the scenery... But if this one hour is the norm then I think we'll have to just have to live with it. Maybe get a bottle and drink it in our hotel room backyard.
