You'll need to forget about brands and focus on individual properties in the locations you are traveling. That's true because no brand is going to have standards that require hotels to have X-foot ceilings. And frankly, it would be impossible to enforce a brand standard that requires rooms to have open living spaces and/or usable floor space. It's far too subjective.
What's claustrophobic to you might be cozy to another guest.
I'd say your best bet would be to use Trip Advisor. Compare the photos you find on the Hilton website with photos submitted by travelers. It should be apparent if the hotel is using camera tricks to make the rooms appear more spacious than then are when you compare photos.
