I'd expect to see 333s covering more premium EU routes and 788s covering old Rouge routes. 789s can be used for long routes (as you mentioned) and maybe MUC/ZRH in the winter. I do think that they should retrofit old planes with the new 333 PY seats as they are much, much better than the current product on the Boeings and it would keep the products more in line with each other.
ZRH seems to get 789 or 77W depending on the season whereas MUC gets the 333's and 77W's for some reason. Maybe the faster 789 keeps the time below where an extra flight crew member is required to ZRH but that MUC is just that tiny bit over the limit.
I can also see the 333's being deployed on some of the more popular "sun" routes next winter.
