Guess it’s the luck of the draw

Our venue kind of has us locked in. Even with the pandemic they said they’d be happy to change the date but wouldn’t refund a dime to us. Original wedding date was 3/29/2020. Since we’re in wedding planning mode too I’m just curious if it’s a family from Costa Rica or a destination wedding.
I was also curious because I’ve asked similar questions before and received completely different answers.
For example - Last February I was puzzled how several San Francisco hotels were sold out for a stay in September 7 months out. I asked on here and people more or less speculated a convention rather than leisure travel, holidays or weddings.
I’m fairly clueless as to why hotels are typically sold out many months ahead which is why I ask as I’m not a corporate traveler. So I really appreciate all the information and replies.
One last question - If there is a wedding there that Saturday with a large influx of guests would it be wise just to depart a day earlier?
(We have currently a 5 night stay planned departing on Sunday, we could potentially shorten it to a 4 night stay departing Saturday going to another property back in the US for a few more days).
I ask not only because of the better likelihood of a TSU application, but also because that Saturday (and Sunday morning) may not be as enjoyable for a Honeymoon if it is super crowded.
Thoughts?
