Basically this youtuber was documenting his stay with a single DSLR.
In his video, he said he was using over $10,000 worth of professional equipment.

I mean, how do we know that, other than taking his word for it? Surely he had his camera equipment available and probably documented his encounter with security, yet he doesn't show any of that in the video, so again, you're just taking him at his word for what "happened".

I mean, not really. Their photography policy is pretty clear on what is or isn't allowed:

"Per resort policy, all filming and photography requests must be approved by the Public Relations department and also supervised by a PR representative. This includes all public areas and guest rooms. Professional photography/videography for personal or commercial use, anywhere in the resort, is not permitted."

He's clearly filming on a professional device, and is for commercial use (ie. his YouTube channel which is monetized).

He can complain all he wants, but the hotel is simply following their posted filming/photography policy.
