where do you get salted fish? My favorite restaurant dishes are steamed pork with salted egg or salted fish, with or without Chinese sausage, and preferable with chopped water chestnuts. Only at restaurants and I last had it in January or February 2020 in a newer Chinatown - The Bayview of SF, which of course has displaced many former longtime residents as that area became more Chinatown.
Not sure about SFO... but up here, I usually go to a chinese dried goods shop (most chinese malls here have one) for salted fish (广东咸鱼) or dried scallops, but some chinese supermarkets would likely have it as well. Not sure how it would taste if you used western salted fish though. That's definitely something completely different.
