Other parts of the world, I've found it rare that you can just leave the property without formally stopping by the front desk, checking out, having them rerun your credit card, etc ...
I'll re-iterate, i don't think bypassing the front desk would play out very well outside the US, although i see OP is from Canada...that might work.
As long as everything is paid for there isn't any problem doing this anywhere in the world. You can settle all your expenses without any issue a day before your official departure.
In any case they have a cc authorization and I've just bounced out of a hotel many times when I ran late, overslept or there was a long line at the front desk. Just sent them an email or called later.
