Your 1st assumption is the correct one
You will be downgraded to silver at end of 2021 (if you collect 80xps as you expect) then all xp collected in 2022 (up to 100) will help you keep silver or if equal/over 180 xp then will grant you gold
After 180 , your gold will be valid for 12 months (+3) from the moment you pass this threshold , and depends on the month it happens, your membership will not follow gregorian calendar (unless you again go over any threshold in december)

You have to collect XP during the 12 months of your qualification period (the 3 additional months are just to use/enjoy your status)

Once you pass over a threshold , you will be autoamtically granted the new status , so almost no possibility to find yourself with a surplus of 80xp (unless you went over this threshold in the middle of your trip in J or P)
