I'd start shopping around solely on the basis of Omaha's Spamhaus record.

This is an entirely different sort of product from the prime, heavily marbled stuff, but they've piqued my interest nonetheless: Lasater Grasslands. Most curious if anyone has tried this or any of the other grass-fed purveyors out there.
