Not an exact carbon copy of your situation, but I just had an upcoming booking to Canada cancelled (made using Avios and a GUF2 which had an expiry of February 2021),the FTV issued for the trip protects both the Avios, the value of the Taxes paid, and also the GUF2 (irrespective of expiry date) for use on a new trip taken prior to April 2022.

Hopefully the same will apply with the 241 vouchers and they will be protected within the FTV.
