I've looked into this in past years and came to the similar conclusion that the cost saving wasn't significant enough as fares ex DXB with EK are disproportionately high compared with EK fares ex LON via DXB to wherever. Same could be said of the other ME carriers via their respective hubs. The main sweet spot I found was with Sri Lankan ex BAH/DXB/DOH/AUH/MCT via CMB to wherever as these represented much better value for money. However unless you're thinking of going to Sri Lanka, your journey will always involve 3 flights including the BA redemption because of having to fly via the ME and CMB which may/may not put you off, especially with a young family in tow.
